Easy Veggie Chili (with secret ingredient!)

There are almost an unlimited number of chili recipes and many of them can be made without meat. The following is a recipe for a rich and healthy chili that can be made in about 10 minutes. You won’t miss the meat! 

Shopping List:

  • Carrots, onions, zucchini, cabbage, and/or mushrooms (2-3 cups total)
  • Olive Oil
  • Minced garlic
  • 1 can organic crushed tomatoes (look for organic, fire roasted!)
  • 1 can dark kidney beans, rinsed
  • 1 can black beans, rinsed
  • Spices include chili pepper, cayenne pepper, cumin
  • Secret ingredient: 1 tablespoon cocoa powder
  • Chopped prunes or sundried tomatoes are a nice addition
  • Mashed tempeh and/or cauliflower are excellent thickeners

In a medium pot, saute chopped veggies and garlic in 1 to 2 tbsp. of olive oil. Cook until the carrots are tender. Mix in tomatoes, kidney beans, and black beans. Add in 3-4 tbsp. of seasonings (see above selection) plus a dash of salt. Simmer for about 10 minutes.

Serve with whole grain bread and a salad. Enjoy!

Interesting ingredients, Bill! My wife and I were just discussing trying out a mole (cocoa-based) recipe. Nice tip about using cauliflower as a thickener - I like that much better using flour, like so many cooks recommend. I'm currently in my test kitchen experimenting with a truly healthy pancake recipe. Fingers crossed. On good days, cooking often feels like play time. Especially when the recipes turn out! :-) Take care! JP

Thanks JP! Waffles are a Sunday morning favorite of mine. Lately I have been using buckwheat mix and substituting 1/3 of the mix with oat bran. I add 1-2 tablespoons of chia seeds for extra fiber and essential fatty acids. Unsweetened soymilk instead of milk and a free-range egg. Raw honey or real maple syrup with crumbled pecans on top. Give it try sometime! Bill
