Pear & Avocado Salad

An exotic and delicious light meal or side dish that is perfectly fitting for summer!
The Salad:
- Prewashed mixed greens
- Ripe Pear, thinly sliced
- Ripe Avocado, cut in cubes
- Pumpkin seeds (chopped walnuts or pecans will also be delicious!)
Secret Ingredient: Creamy Balsamic Dressing!
- Balsamic Vinegar
- Olive Oil, 2 tbsp
- Tahini, 2 tbsp
- Fresh Basil, 1 tsp minced
- Ground pepper & sea salt
- Garlic, minced (optional)
Combine all dressing ingredients in a jar and shake thoroughly. Toss dressing with mixed greens in a bowl and spoon onto a plate. Arrange pear and avocado on top and finish with a sprinkle of nuts. The tahini will add an exotic creaminess to the balsamic without being overpowering. Serve immediately and ENJOY!
