Recipe Idea: Pumpkin Buckwheat Waffles

I’ve been experimenting with breakfast ideas, trying to trim wheat and some carbs out of the start-the- day-meal. Creating a healthy breakfast that doesn’t raise your blood glucose and contains healthy fats is a real challenge. Eggs certainly pass for healthy, but most classic breakfast ingredients do not. And sneaking vegetables into breakfast is a near impossible assignment.

Maintaining Healthy Habits Over the Holidays

Right now you’re probably thinking about grabbing a mini snickers from that stash of leftover Halloween candy on your dining room table. Or maybe your thoughts are filled with pumpkin pies, baked macaroni and cheese, and fried turkeys. The holidays are upon us; and while it’s true that many people experience weight gain during these latter months, it is certainly avoidable. With a conscious effort to maintain healthy habits it’s easy to avoid the holiday bulge.

Glucose control, part II

In 2010 my New Year’s Resolution was to lower my average blood glucose.  Last April, I posted the article How Low Can I Go and vowed to do everything I could to reach consistent fasting blood glucose levels below 90 and an Hb A1c of 5.0% without resorting to medical therapy.

Confessions of an Average American

I have a confession: I am an average American when it comes to diet and exercise. Most of us, me included, get so caught up in our daily activities and responsibilities that what we eat and how much we exercise is just an afterthought. Leaving diet and exercise as an afterthought is extremely dangerous to our future health. We may feel fine now but chronic disease will catch us in the end if we don’t pay attention now.
